Recipes featured on this page have been prepared and personally "tested" by hearth cooking participants during hearth cooking classes at the Woody Hill B&B. And although you may not have been with us to experience chopping your own wood, building a fire from scratch, and tending iron pots over the hot coals, we're certain you will enjoy the results of the recipe below!

CORN OYSTERS (pictured)

Actually, these contain no oysters,
but were the poor man's substitute.

 

2 cups corn  (frozen and thawed, fresh,
or canned)
2 egg yolks
½ cup flour
1 tsp baking powder
1 tsp salt
few grains paprika
2 egg whites

Preheat either hanging griddle over fire or long-handled griddle over coals. Grease with bacon fat if you have it, regular crisco if you don't. Chop corn coarsely. Beat egg yolks until thick and add to corn. Sift together flour, baking powder, salt and paprika and stir into corn. Beat egg whites until stiff and add to corn batter. Drop by spoonfuls onto hot griddle and cook until delicately brown about ten minutes but watch.  How fast they cook will depend on how far they are from fire or coals. Drain on paper towel if necessary.

Makes 10 and just fills the griddle, although picture above shows smaller ones.
